Fashion Friday: Fashion Meets Food


This food has to be the most fashionable sustenance I've ever seen, perfect for Fashion Friday with Blonde Episodes. I love the kitschy and very ironic meeting of fashion and fast/junk food. I want to wrap these up and put them on display - forget eating them! Although, I wonder how much Hermes french fries would cost me...

Pink and Green Thursday: Mexican Cobb Salad and Watermelon Martini


How delish does this Mexican salad with shrimp look? It's so healthy too, so you don't have to skimp on portions. I'm newly obsessed with Skinny Taste, the source of this lustworthy recipe, so you should all check out the plethora of healthy recipes on the site that don't forgo taste. Plus, it's pink and green - perfect for Pink and Green Thursday with Trish!

The original post is here, but all you need to do is layer shrimp, avocado, lettuce, tomatoes, grilled corn, black bean salsa, cucumbers, and cheese - then voila a tasty, filling salad!

Then you can wash it all down with a refreshing watermelon martini - just try not to get too sloshed!

Fourth Festivities

Happy Fourth of July, everyone! I hope everyone is enjoying their long weekend and spending it with great friends and family. I unfortunately was under the weather this weekend, but was still able to enjoy time with family, friends, and True Blood. Also peeked at a few fireworks from my car window.

If you're last minute with your plans like I am and have an 11th hour 4th party to attend today, here is a super easy dessert to whip up and bring. It's also brought to you by Skinny Taste, so it's low in calories and guilt free!



Ingredients:
  • 10 oz angel food cake, cut into 1-inch cubes*
  • 2 pints strawberries, sliced
  • 2 pints blueberries

For the cream filling:
  • 6 tbsp fat-free sweetened condensed milk (I used Borden Eagle)
  • 1 1/2 cups cold water
  • 1 package sugar-free white chocolate instant pudding mix
  • 12 oz fat-free frozen whipped topping, thawed

Directions:

Whisk the condensed milk and water in a bowl. Whisk in the pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set; fold in the whipped topping.

Arrange half of the cake in the bottom of a 14-cup trifle dish. Sprinkle evenly with a layer of blueberries. Spread half of the cream mixture over the blueberries and gently spread (I piped it using a plastic bag and cut the corner off). Top with a layer of strawberries. Layer the remaining cake cubes on top of the strawberries, then add more blueberries and top with the remaining cream mixture. Finish with the remaining strawberries and blueberries, arranging them in a pretty pattern. Cover and refrigerate at least one 1 hour.

*I only used 10 oz of a 16 oz cake.

Delicious Decor

I've been so busy this week since I've started nannying (call me Mary Poppins). The kids are great, and I love finally having a summer job, but I am exhausted and still need to get into the swing of things. Since I've been working a lot, it makes it harder for me to keep a healthy lifestyle. Coming home tired for work lessens my motivation to go work out and I'm definitely a comfort eater.

So instead of relying on my old love for sweets to take away the stress, I've been finding some sweet looking decor, cupcakes to be exact, to replace my lust for the real thing. Plus, they are super cute!

The Big Texan

Finally, after a long weekend of driving and moving, I am back in STL and back to civilization. Unfortunately for my dad and me, most of New Mexico, Northern Texas, and Oklahoma looked like this stunning landscape:

One bright spot in the halfway point of Amarillo, however, was the Big Texan. You can't even drive through Texas without stopping for some great beef and BBQ.

The Big Texan is conveniently located right off the highway, and is famous (you may recognize it from Man V Food on the Travel Channel) for its 72 oz steak in 60 minutes challenge. Yikes! In fact, extreme eater Joey Chestnut downed the meal in merely 8 minutes! I still can't believe it.

The iconic cow advertising the challenge is one of the many cows we saw on our trip. My lovely father was so bored at one point that he started honking and waving at cows. eye roll. While I didn't try to tackle the challenge, I did enjoy some great beef brisket and spare ribs:


SO. MUCH. FOOD. And of course the visit was not without a dose of Texas pride:

So cute. While I am a bigger fan of Rudy's bbq in Texas, I would definitely recommend stopping by the Big Texan if you ever drive through Amarillo. It was so much good food and great, larger than life Texan atmosphere. What did you do this Memorial Day weekend?

Pink and Green Thursday: Cinco de Drinko

Going to one of the top party schools in the nation located very close to Mexico means that Cinco de Mayo is the top holiday only behind Christmas and Halloween (it allows for girls to dress trashier). I can't wait to celebrate and block parties have been popping all day long. In honor of this special day and Pink and Green Thursday, let's celebramos con pink y green margaritas! (i'm sorry for my awful spanglish!)

Lust List: Lazy Saturday Brunch


I don't remember the last time at school I had a lazy Saturday. Today I was up bright and early to work a screening of Thor (GOD OF THUNDERRRRRR) and will be working the baseball game til 8, so I'm jonesing for sleeping in and breakfast in bed. I'm listening to Jack Johnson's "Banana Pancakes," one because he reminds me of the beach/summer and two because it fits a dream lazy Saturday perfectly. Now to reveal my inner glutton and fantasize about food:
Martha Stewart's bacon egg and toast cups are calling my name right now. drool. These would be great for mother's day and seem so easy (even maybe I can make them!). I love Martha, and hope that she can help domesticate me one day.


This heart shaped egg in a hole recipe is another cute Mom's Day breakfast idea. Too bad mi madre hates eggs
My dad made a version of this breakfast casserole on Easter weekend. It's soooo good and perfect for groups and families.
